Linguine with Lemon Pesto and Spinach


Today’s recipe is a very quick, yet a very tasty one. In fact, it is one of my favorite recipes. Remember that in my very first post, the lemon tart, I teased about a lemon pesto? Well, here it is!

My mom discovered the recipe in a pile of cut out magazine recipes some years ago. Since then it has been integrated in our list of go-to recipes, when you need a quick meal that is also easy to prepare for many guests. I simply love the lemony taste of the pesto! It’s such a fresh dish, just perfect for the summer. And the spinach is great for balancing out the very intense pesto taste… I can only recommend you trying this as long as it’s still warm 😉

Ingredients (serves 2):

250 g Linguine
50 g pine nuts
1 clove of garlic
1 organic lemon
70 g parmesan
4 tbsp olive oil
50 g fresh baby spinach

Bring water to the boil, season with salt and cook the linguine al dente. In the meantime blend pine nuts, garlic, olive oil, lemon zest and lemon juice with half of the Parmesan in a blender. Season with salt and pepper. Pour off the pasta water and mix the linguine with the pesto. Season again with salt and pepper and gently fold in spinach and the remaining Parmesan.

    1. Ooh, in my eyes the cheese is the best 😉 but that’s a matter of taste, it would be interesting to try it without the cheese, actually. Let me know how it went!
