Tortellini with Roasted Mushrooms

Do you also know these weekends, where you just do nothing? At least if you don’t count binge watching of some tv series as something productive 😉 In the beginning, I always quite like these kinds of weekends, but when Sunday evening approaches I go completely mental, starting to doubt myself, wondering about the weirdest problems…

Luckily there is one thing that can get my mind off these issues – cooking! This time I prepared a quite simple dish with tortellini and mushrooms. Adding the lemon butter and a bit of parmesan added the special something, so the dish did not taste too boring. Of course adding some fresh herbs would upscale the dish even more, but unfortunately I went out of stock for the time, so I first need to buy new plants before I do this next time 🙂

Ingredients (serves 2):

150 g tortellini
1/2 small onion
1 tbsp olive oil
1/2 clove of garlic
200 g mushrooms
30 g butter
1 tbsp lemon juice
30 g parmesan

Bring water to the boil in a small pot. While the water is heating up, chop the onion into fine bits. Wash the mushrooms and cut them into eighths. Heat up the olive oil in a frying pan and braise the onions lightly.When the water is boiling, add a tsp of salt and the tortellini. Press the garlic to the onions, then add the mushroom bits. Turn up the heat and fry the mushrooms for about 2-3 minutes until golden brown. Season with freshly ground salt and pepper. In the meantime melt the butter in a small sauce pan, then add the lemon juice. Pour off the water of the tortellinis and serve them with the roasted mushrooms, the lemon butter sauce and freshly grated parmesan.
