Spinach Watermelon Feta Salad

Summer and barbecues go hand in hand for me. Funnily enough, even before I became vegetarian, the best thing about a barbecue to me was the variety of salads πŸ™‚ It happened so often that I was already full, before even putting anything on the grill! If you’re planning on having a barbecue on the weekend, why not try to put this fresh summer salad on the buffet?

I know the recipe is really short, and I sort of feel bad about that. On the other hand though, this salad is convincing in it’s simpleness, and tastes surprisingly new, so I wanted to share it with you anyway. I used a lemon oil and fruit balsamic vinegar, which gives the salad a special taste. But if you don’t have this kind of oil at home, you can also just use normal balsamic vinegar and olive oil πŸ™‚ Have a nice weekend everyone!

Ingredients (serves 2):

1/8 small water melon
200 g spinach
100 g feta cheese, in cubes
1/2 small clove of garlic
Salt, pepper,
Lemon oil and sweet vinegar (e.g. pomegranate balsamic)

Wash the spinach, cut the water melon in cubes and mix everything with the feta. Press in the garlic using a garlic press. Season everything with salt and pepper, and oil and vinegar.
